That is a very pretty mushroom. All of the boletes that popped up over here a month or two ago were immediately siezed by critters and left holes all over every one. check out allrecipes.com or foodtv.com or one of hundreds of other recipe sites. I am not familiar with this mushroom.

Sorry shroomydan. Yep the latin name is Calocybe gambosa, also known as Agaricus albellus, Agaricus gambosus, Agaricus georgii, Agaricus graveolens, Calocybe georgii, Lyophyllum gambosum, Tricholoma albellum, Tricholoma gambosum, Tricholoma georgii and Tricholoma graveolens just to confuse people!
They're very popular all over Europe and fetch something like ?100 per kg fresh although I have no plans on selling them.
Many people class them as being tastier than morels and they reconstitute very well from dried with a lovely, firm, meaty texture.
Do you get these in North America? I couldn't seem to find any information on them on mushroomexpert, mykoweb or Tom Volk's site

Sure were!
Cooked them using Antonio Carluccio's recipe (From 'Complete Mushroom Book, The Quiet Hunt')
Fried in butter with salt pepper and freshly picked wild garlic and served with scrambled eggs, a thick wedge of toasted granary bread and a sprinkling of parmesan - delicious!
Can't wait to nab some more this weekend...

It wouldn't surprize me if they've popped up here or there in the past but never heard of any established anywhere in North America.....just like us having a couple people that have found Matzutake up by Big Bear Lake or Lake Arrowhead areas couple times just by chance but definately not established here.....nothin you can actually set out to find like you can Morels there.....we do have some considered Calocybe but dont think they're all that similiar
If you find any monsters this year ya should post em.......always wanted to try the long...slow...roast over inderect heat on the grill in the Bar-B ......sure you've done em pretty much every which way
At risk of being redundant.....heres a couple more you probably already have.....I was already confused anyway.....
Calocybe gambosum Lilloa 22: 168 (1951)
Calocybe georgii var. gambosa (Fr.) Kalamees, Z. Mykol. 60(2): 360 (1994)
