harvesting: simultaneous or progressive?

one of my cakes will have a fruit ready to harvest in probably 2 days at most. there are numerous other pins just emerging that will take probably 5 or 6 days to maturity, my question is should i harvest simultaneously when the are all done maturing, or progressively pick them as they are ready?

oh, i know the faq says to try to harvest all within the same day.. this is my only cake with such uneven pinset, so im really asking whats my best course of action for this cake.

If the faq says that, it is outdated/incorrect. Pick the fruits as they are ready. If pins will be damaged by picking a large fruit nearby, then simply cut off the stem of the fruit just above the surface of the substrate so as not to disturb the pins around it. Remove the 'stump' when you harvest the rest. There is absolutely no reason to feel you have to pick all the fruits from a cake or casing at the same time or even within a day. RR

If there are no pins near the mature one go ahead and pick it. If there are pins nearby just cut the cap off and pick it with the rest.

Typically you would harvest all at one time, cutting down on risk of contamination, which is one reason an even pin-set is desired. But as you said you didn't get one, so like da rabbit says pick'em as they grow.

This is the advice of most all veteran growers I even use an exacto knife to surgically remove the stump then fill with casing mix.
