Two concerns, seeking knowledge

1st concern in the pic - the blue ring right above the veil. is this indicative of too low moisture? nothing else is blue, maybe they just grow this way? this particular fruit just doubled size in about 11 hours
second, mycelium seems to be colonizing my paper towell, is there any concern there?you can see it in the pic as well, coming off the cake.

will mushrooms grow from colonized paper towell? or will lack of nutrients put a quick end to its exploration?

it probably wont pin from the paper towel, but there are actually nutes in it that it can use... remember folks use cardboard for cloning, and have even grown certain species on newspaper (don't know how well that fares for cubes specifically...)
myc also forms a network and the growth on the paper towel can help suck up water and transport it to other areas. its also possible contams can grow on there too (although i dont think many will thrive on a paper product) so keep an eye out. will be interesting to see how far it does go...

I think id take that paper towel out of there. The whole point to putting somthing under your cake is so water cant saturate the cake. Your paper towel looks saturated.. I would take it out and put some foil under it.
