Compost Piles

I'm starting a compost pile thats fairly big. So far I just put some leaves, lawn clippings, and left over lettuce and worm casting I had laying around. What other things can you put in my compost pile?
My neighbor has one but he told me he had rats eating it, and it eventually infested his big greenhouse with rats and mice. Probably put steak and food and there I would imagine.
any tips with compost piles? Should you put water on it every day? Should you turn it everyday?

you should water it when you water your plants, turn only after digging for some substrate... you'll have some fat worms...

Maybe put some chicken shit or cow-horse manure in for a source of nitrogen ( I use urea sometimes to get the pile cooking ). Don't put any meat or bones or anything like that in there. Straw, leaves, lawn clippings and used casings all make great compost material. The pile will have to be turned ever three or four weeks and watered about once a week. You know your pile is working if you stick your hand in and it feels HOT, the bacteria in there produce heat as they break down the compost. I usually just start a pile in the spring and then by the following spring its ready to use.

I added tons of shit I found in my friends farm...............He cleans the animals and actually brings the shit and piles it in the farm......I used a shovel and it seriously was so hot I couldn't even touch it./....interesting...there is Datura growing ALL over it =D
