About 2 days after PCing my WBS jars they look almost like they dried out completely. Is this normal or should I redo?

looks can be deceiving, it's hard to tell the moisture content of grain just by looking at it. You can tell a little bit by shaking them, they shouldn't sound like maracas.

I am assuming that you allowed the WBS to soak for about 24 hrs before PCing so it would be at or around optimal hydration?

w/e skeletor is talking about lol ...
i soak for 24-48 hours and then jar up and pc and have let them sit for up to 3 weeks and they still have perfect moisture content so they should be fine.
but i'm no expert

The above posters are right, looks can definately be deceiving. I had some old WBS jars that were at minimum 6 months old. They looked dead, but I figured I had plenty of spores so I might as well see; sure enough I knocked them up with several CC's of solution and two weeks later I have two ideal spawnmasters.
They're probably fine if you did your soak right.
