Too Fast?

I am currently in my first attempt and I have chosen the Hippie Neglect TEK since it seems to have the least opportunities for error. I did 24 half-pint jars and so far I've lost none to contamination, (Yipee). The problem is that they aren't behaving as I've read they should. The jars all seemed to miss the "pinning" stage and went directly into growing fruit. The problem is that the early fruit seem to be going bad while I wait for the rest of the jar to fill. Should I harvest the fruit that seem ready now, do a dunk and keep them going or should I wait until the jars fill with fruit before harvesting? This might seem like a dumb question, but the subject of skipping the "pinning" stage doesn't seem to be covered in any other post.
Truth be told, there really isn't much information about the Neglect TEK out there so I'll fill you in: The TEK says that instead of birthing the cake a few days after pinning, you just leave the jars alone and let them fill with fruit before harvesting. Then you do an overnight dunk and put them back in the jars for further flushes. I like this TEK because I go out of town frequently and doing the thrice daily "watering" would be impossible. The TEK says that it will take a couple weeks longer, but the yeild per jar ends up about the same.
To further assist in your analysis, I've taken a photo of one of my jars that's typical of the problem I'm encountering. You'll see that the fruit is rather large and ready, (I think), to be harvested, but the jar isn't full yet.

Excuse me?............ dunk and put back in the jars?.... you better read up Brah............ you`re confused.. neglect tek is just let them grow in the jar..... If you dunk and put back in the jar they will be waterlogged bigtime

I was under the impression that dunking the cakes after harvesting would greatly enhance the yield in subsequent flushes. You see, because there is no water added to the substrate aside from what is added before innoculation, it is advisable to use the Dunk TEK to replenish water after harvesting. In fact, it's the one thing I felt 100% sure of from what I found about the Hippie TEK. Please advise further.

Dunking is great yeah.......... but just put your dunked cakes on the perlite in your terrarium..... not back in the jar
