Chicken Tenders w/ Gorgonzola Sauce

Chicken Tenders:
1.5lb Chicken Tenders(sliced up breast)
1/3C Flour
1C Italian Seasoned Breadcrumbs
2 Eggs
Salt
Pepper

Gorgonzola Sauce
8oz Heavy Cream
2oz Gorgonzola
1T Butter
Salt
Pepper
1t Corn Starch
Water

1. Preheat oven to 400F. Get your tenders out, and give them a little salt and pepper on both sides.


2. Whisk the eggs in a bowl, and put the flour and breadcrumbs on seperate plates.


3. Roll a tender in the flour, dip it in the egg, then roll it in the breadcrumbs. Only use one hand for this so you have one clean. Repeat for each tender, and place them on a baking sheet. Put them in the oven for ~20 minutes.


4. While they're in the oven, get a pot or sauce pan out and put the cream in it over medium heat. Let that get warmed up, then add the butter, cheese, and salt and pepper to your taste.


5. Once everything is combined, get the teaspoon of corn starch and a little cold water(about a teaspoon) together in something and mix them up into a slurry. Add that to the sauce and bring the sauce up to an easy boil. Then take the heat down to low. It should be thick enough so that if you coat the back of a spoon and run your finger through it, the line will stay.


6. Take the tenders out of the oven when they're done and plate them. You can serve the sauce on the side, or put it right on top. I put some right on the tenders and added a little parsley for some freshness and color.


This is one of my favorite easy meals. Sometimes for the sauce I will cook some shallot, or onion, with some garlic in the butter and then add the cream, cheese, salt and pepper. I was just lazy today.

That looks damn good. I make my chicken the exact same way. I'll have to give the sauce a try, though.
