You want no standing water in your jars.
So if you tip the jar and see water move, or ringlets of water on the WBS, then you have to much water.
I've fucked up a lot of jars (100+), due to excessive moisture, so I know what to much looks like

yeah man the reason most grains fail is too much moisture what i do is soak for 36-48 hours then simmer for 30 and drain its done when u load em in the jars and absolutley zero water collects

^^ To each his own.
I've simmered for 45 mintues and they were TOO WET by far...I've done ever tek(wbs wise) you've ever seen, and fucked it up ...hahah
Mine are ALWAYS to wet.
Now I just add like 1/4 an inch of verm. on the bottom...PC...then when I take them out I slide the seeds around, without moving the verm...This allows the water to fall out of the seeds and onto the bottom...the verm collects it, and then I SHAKE SHAKE SHAKE...lol
Then my content is on the DOT...hahah
Weird, but it werks.

don't dry for an hour don't dry for 30 mins don't dry with a towel simply drain with the pot lid like you might drain pasta. then toss in a spoonful of verm before you laod you jars.
added bonus is you can now use more spore solution/LC and not get wet jarssss

I also use verm with my wbs and rye. This has stopped any wet spot and may also help add moister to the myc as it grows.

If they're burnt, they will be dry.
I'd start again.
Ran into this myself tonight.. got gabbing with the neighbors.. Was just warming the PC up.. It prolly blew steam for .5 hours..
I came back home, saw it steaming like all hell. Ran and put the weight on..PCed for 90 minutes @ 15PSI. Pulled them out and the bottom few inches where black.
I removed the lid from one of them and the burnt grains were light and dry. Total waste. I'm going to knock one up just for shits and giggles, but the rest are getting redone tomorrow.
