I have 7 quart rye jars pcing and in 15 minutes they will be all cooked. Lately I have been taking them out at 0 psi and then letting them cool outside of the pc. They seem a little dry when I do this.
But should I let them cool completely in the pc?

I wait until pressure equalizes, then go in w/ oven mitts and shake as soon as possible. Repeat again when completely cool, then again before you inoculate. In my experience, allowing to cool overnight, untouched, will lead to stuck grains/clumps. Distribute the moisture around while still hot, seems to help a lot.

Yes.
The jars get cool way to quick and suck in a whole bunch of air, that's probably where you're losing your moisture. Either that or add a lil bit more water to the seedies so that losing moisture would make them perfect...but that might be a bit harder ...lol

Damn it. Well at 45 minutes I turned the burner off and then lifted the PC to set it on another burner that was cool and the rocker slid and let 2 psi of pressure out over a manner of seconds. What are the consequences of this?

When you pull them out and shake them, make sure the air around you is clean as well as where you intend to let them cool(The jars suck air into them as they cool).

I got tinfoil on the top it looks like its getting suctioned down. I am not worried about contams I have never had one.
Well I shook em and they have that dry look grrr I hate that look. Wish me luck

What are you inoculating them with?? If your using an LC or spore-syringe & your worried about water content you could use a little more solution that you normally would.

TIP: when you PC, loosen the lid a bit..So that air pushed out doesn't pass through the filter as much...And as soon as you take them out of the PC...Tighten the lid...So that when they suck air IN, it'll be ONLY through the filter...
