Too much humidity?-Fluffy mycelial growth

Hey Y'all, my cakes are still producing tons of hyphal knots while i wait for pinning to begin (now over a week!) and I'm noticing fluffy mycelial growth on the outside lower portions of the cakes. Is the humidity too high or too low? My hygrometers are confusing me, water condensed on the cakes while the hygrometer still read 80%. What is going on? I'm worried I won't get any pins here......

windex, thank you! a friend sent me the hygrometer and he calibrated it before he put it in the mail, both with salt then w/jeweler's screwdriver...but my guess is just that the thing is 20% inaccurate and not his fault in the least. I'm glad u could tell me what's going on! i now am turning off ultrasonic for periods during the day and it seems to be working. How do you judge your humidity? Is 100% when water condenses on the cakes?

i keep it real simple, i just make sure its humid enough to keep water on the side walls, enough to eventually get a drip. I trust my thermometer, although i probably shouldnt and try to keep my temps in the lower 80's and everything seems to go fine. this is my fourth batch and the hardest part i have is with the incubation.
