From incubation to fruiting - right time?

Hi there-

Ok so I had two hpoo substrates colonizing with mycelum, and after about a week, I looked at the growth, and its about 50-60 % colonized.
I am pretty sure that the growth may have stalled a bit due to lack of air exhange and is slowing.

Is this a decent time to put it in the fruiting chamber - or should I continue to wait until mycellum has covered the entire surface of the hpoo?

Fully covered...Then wait a day or two to ensure that the middle and bottom (the whole thing), is completely colonized.
