too much myc?

My casings have been in the fc for several days now.  I give them enough light, humidity and temp is right.  Though it fluctuates from 75F +/- 3 degrees.  Now I am keeping it at around 71 (i started my ac today). 
The casings are wbs topped with 60/40.  They colonized extremely fast even.  The myc ate up all the coco i threw at it.  Now two of them see to have stopped colonizing but they are almost completely myc.  I know that this can lead to overlay very quickly.  Just to make sure that it is not overlay (never have seen it) i gently pushed down on a corner of myc and it is very spongy...not matted or dead. 
What should I do now?  If I follow Hyphae's pinning advice this would mean that I would have to mist the myc until near saturation?  Just not sure what to do without extra casing.  Let me post some pics.  Sorry for the shitty resolution.

The casing on the left was placed in the fc 3 days ago...the myc is barely about to break the surface...but I think it stopped growing.  This is my PESA strain.  The one in the middle is a very thin casing of Tas and the one on the right is double that of tas.  The temp now is 70, the humidity is high, and the coolmist is flushing out the CO2.

I'm not good at identifying overlay, but I'll give a suggestion anyway. Give up coir as a casing layer. Coir is too nutritious to be considered a good casing layer. Stick to 50/50+ with peat moss. I just used the last of my coir to spawn to as a bulk substrate and it's working wonderfully for that.

err...i can't tell if its overlay. The temp in my fc for the first two days was a little too high. ~78 or 79 i think. maybe it is overlay.
50/50 sounds good to me.
