Early Pinheads

I am a newbie and have brown rice cakes in half pint jars. I turned the jars upside down to speed up colonization in the bottom. Now my jars are about 95% colonized. Over the weekend, they got too cold, around 65-70 degrees for about 36 hours. Now there is a mushroom starting to fruit and is about a half inch long, and several other white pinheads forming. I turned the heat back up when I noticed, but the damage has been done. I think I accidentally cold shocked them. Should I fruit them early or leave them until they are finished colonizing. If I do fruit them early, what do I do about the bottom which is still the substrate with no myceliem?

brush off the uncolonized substrate or wash it off with distilled water. it should be fine as long as the mush didnt rot or anything

Just leave them in the jars until they are fully colonized. If you want to, you can birth them and then cut off any of the uncolonized substrate using a sterilized utensil. There is nothing wrong with letting them grow a bit inside the jar before they are birthed though.

if you birth them your going to have to scrap that uncolonized stuff off it is likely to contam. you said they are close to done i would try to get them to finish up though going into the fruiting state i don't think the myc grows much. try to get them to finish and if they don't then birth and scrape
