ok, so there are these 1 pint jars that are fully colonized with mycelium, but the problem is that these jars aren't wide mouth so pounding out the cakes is impossible. can i just use a sterilized fork or something to break apart the mycelium inside the jar? i don't want to damage the mycelium.

A spoon would be better, less damage IMO.

Remove chunks and put into a NEW, UNOPENED ziploc baggie and then seal and break up for like 5 minutes till they are like skittle sized.

Case it, incubate, then fruit.

Yea, using a fork won't hurt anything. If these are PF style cakes, you can grate the pieces up for spawn. If you're just going to case it straight, break it up small enough so you don't have air pockets.
