BBQ - grilling recipes needed

got a new BBQ yesterday - now I need some good grilling recipes

I'm doing another asain flank steak tonight.

Bring on some new recipes:

BBQ chicken legs - very easy and very tasty

1 package chicken legs
1 bottle BBQ sauce - I like C.J.'s

Grill the legs on medium heat on the top rack for 1-1 1/2 hours or until the meat pulls off the bone.

Add BBQ sauce for the last 10-15 minutes of grilling - just long enough to get the BBQ sauce hot and sticky, but not long enough to burn it.

A good method for stickying your BBQ sauce so it doesn't fall off the meat and stays on your face until you notice it later when you're looking in the bathroom mirror, is to take your bottle of BBQ sauce and simmer it on the stove to get the moisture out of it.

I like the stick to your meat BBQ sauce. If it's all runny and shit I get all pissed.

I've done one where you take some kielbasa or other good kind of sausage and cook it first on the stove in a pot of beer with sliced onions, for maybe 10-15 minutes on medium heat.
Then throw the sausages on the grill.
It's good because it cooks the sausage all the way through and you don't have to worry about burning it on the bbq, you can just get it cooked nicely over the open flame.
To serve: put them on some nice baguette with some of the cooked in beer onions and some coarse mustard.

The better the sausage you use, the better this will be--so try to get some good ones from a real butcher who makes them in house, if you can.
Supermarket sausage won't be as good.

Pizza on the grill is good stuff.  Sometimes I cheat and put a stone on the grates :laugh: 

It's hard to beat a good burger though.  Here's one you may like.

Burger:
2LB Ground Beef
1/2 Bunch Green Onions, chopped
1/2T Thyme
1 Jalapeno, chopped
1/2 Habenero, chopped
1 Clove garlic, pressed
1/4C Brown Sugar
1/4C Vegetable Oil
2T Soy Sauce
1/2T Ground Allspice

Mayo:
1/2C Mayo
2t Orange Juice Concentrate
2t Orange Zest
2T Rehydrated Chipotles, minced

1. Mix green onion, thyme, jalapeno, habanero, garlic, and brown sugar together.  Stir in oil, soy sauce, and allspice.  Mix it all up real good.

2. Mix ground beef, and 3/4 of the sauce you just made together.  Form patties and place in refrigerator for 2-4 hours.  Take out about an hour before cooking and allow to come to room temp.

3. Mix all the mayo ingredients together real good and let sit in refrigerator.

4.  Get grill going on medium heat.  Throw the burgers on and baste with the remaining sauce while they cook to your liking.

5. Let burgers rest a couple minutes, put em on buns, then top with mayo.  Add lettuce, onion, whatever you like.

6. Enjoy with a cold beer.

damn daim that sounds tasty and reminds me of a "burning down the house burger"

1 BBQ beef patty with cajun season
1 grilled spicy sausage - cut in half length wise and in half agian width wise - you only need half a sausage
jap rings
pepper jack
potato bun

here is how i make my pork chops:

i let the internal temps get to around 275F
i put some apple juice into a foil bread baking tray and put that in the grill.
wait about 20 minutes
throw the chops in
wait 5 minutes
flip the chops
wait 5 minutes
remove and eat

dunno why, but the tray of apple juice makes everything way more moist and tender.

I like to smoke in my grill a lot. just soak some wood chips (mesquite or hickory, or if you can find it any fruit wood) for one hour, make a pouch out of heavy duty aluminum foil and make a little smoke box, punch a few holes in the pouch or just loosely encase the soaked wood chips with the foil and put it directly over the flame shields or right on the grate, wait for some billowing smoke to appear and smoke away, great for ribs especially but I also like to smoke potatoes and tomatoes for a myriad of culinary uses and dishes. smoked potato salad anyone???

Grills are perfect for home made pizza.

Any grill works perfect as a pizza oven. Just put in a stone, close the lid and let things get REAL hot.

Grilled vegetables are the best. Try your leftover flank marinade on some eggplant or squash on the grill. Boiled carrots are great on the grill.

It is a dandy grill. I did the beer butt chicken on it lastnight. It turned out perfectly since it has the temp gauge right on front.

Stein will be happy to know I stuffed him with a busch lite.

I'm sold on the pizza - I'll make the dough tonight

I'm thinkin dry italian salami, artichoke hearts, sun dried tamaters and maybe some olives and mushrooms - should start seeing some morels soon.

Quick tip on pizza dough..

After youve made it, let it rise, punched it down and let rize again. Form the dough into smooth balls about 10 oz each and wrap TIGHT in plastic wrap and let sit overnight in the fridge.

Doing this flavours the dough, it forces the gasses that get created to penetrate the dough all throught the ball and adds flavor. Its the only way to get a real cracker crispy crust.
