2006.04.17 - Mom's Famous Pumpkin Bread

This shit will blow you away.
Okay! Finally baked the bread tonight. My god does this house smell like heaven. It's a mix of Cinnamon and pumpkin....with a hint of clove.
Now, I made two different versions. The normal moist, flavorful version and a more healthier alternative for everyone out there watching what they eat.
The awesome version:
1 1/2 cups of sugar 1 cup of Libby's 100% pure pumpkin 2 eggs 1 1/3 cups of flour 1 tsp. of pumpkin pie spice 1 tsp. of Cinnamon 3/4 tsp. of baking soda 1/2 tsp. of salt 1/2 tsp. of ground clove 1/2 tsp. of ground nutmeg 1/4 tsp. of baking powder 1/2 cup of vegetable oil 6 tsp. of chocolate chips 1 tiny kitchen

Preheat the oven to 325 degrees.
Whew. Now we mix the sugar, pumpkin, eggs and chips into a large bowl until well mixed.

Take another bowl and sift the flour, pumpkin pie spice, Cinnamon, baking powder, baking powder, salt, cloves, and nutmeg. After sifting, stir it into the pumpkin mix along with the vegetable oil in an alternating pattern...until it's JUST mixed. Try not to overmix it.


Transfer to a well oiled and floured baking pan and toss it in the oven for 90 minutes...or until the toothpick comes out clean when you poke it in the middle of the loaf.

Now we wait...
After it's done baking, take it out and let it cool on a wire rack. This is a bread that's best served cold, so try to refrigerate this baby overnight and have some on you're way to work/school.
Now, alternatively...for a healthier version, you could just substitute the sugar for baking splenda, and the flour for whole wheat flour...but it tends to not rise as much, and isn't as moist. It's still damn good though. Here is the awesome version. Mmmm. JUST like my mom used to make me.

I just had a slice of it this morning from the fridge...and it was like being in high school again. Didnt have the milk though

It's easy. I was able to write and revise an essay in the 90 minutes it was baking for. Little checking was needed until the last 15 minutes.

Never fear, daimyo is here. This time, I bring to you Chazzersize's Mom's Famous Pumpkin Bread 
1. I got the oven going at 325F. Then, I mixed the sugar, pumpkin, eggs and chips together. I already had a bag of chocolate/caramel bits open from some cookies I made the other day, so I used those.

2. I sifted the flour into another bowl, and then added the pumpkin pie spice, cinnamon(freshly ground ), baking powder, baking powder, salt, cloves, and nutmeg. Then I mixed it up.

3. Alternated the flour mixture and oil while adding to pumpkin mix until it was all just incorporated.

4. Transfered mix to oiled/floured 9x13, and placed it in the oven.
5. 90 minutes seemed to long(since I think I was using a bigger baking vessel), so I set it for an hour, and checked it at 40 minutes. It took a little less than an hour to finish.

6. I wasn't sure how long to let it cool in the dish(if at all), but I gave it 10 minutes, then moved it to a rack to finish cooling. Normally it would have sat in the kitchen, but I had some other things going and didn't want it in the way. So I got the bright idea to let it sit outside. There was a window where I could keep an eye on it 
About 20 minutes after I set it out I decided to check on it, and what do I find? A GOD DAMNED SQUIRREL EATING IT!!! That mother fucker! I saw him nosing through my beds after I turned them and thought, I should set a trap. Didn't do it, and what do I get in return? A thief. Needless to say I'm going to shoot him and cook him, so look for that post in the near future. Here's what the little shitprick did:

I cut off the section he got at, and I'll keep the rest. I tried a piece from the opposite end, and I must say it is quite tasty. I'll try some more later with a glass of milk.

AH. I feel so bad for you...this should never happen to a bread like this. Maybe a pie, but never to a loaf of pumpkin bread.
Try putting it in the fridge, and then with a glass of milk. You wouldnt believe how much better it tastes.
Great job daimyo! This reminds me of my mom's pumpkin bars. SHe would use a flat baking pan and then spread icing on it after it was done cooking. Mmm.

Sorry about the lack of pictures. I made this bread while writing an essay...on a major writers block.
My loafs are in the freezer right now, but when I take them out, Im going to enjoy a few slices with a glass of milk and.....maybe a doobie. Not quite sure.

Hell yes! Pumpkin bread is the best, I always loved this stuff by the fistful when my grandmother would make it. I'll seriously try this out and come back to post.

Made this bread yesterday and its damn tasty...
I couldnt resist making a "special" muffin too. Definetly better than brownees. The earthy flavors of the pumpkin bread goes well with the chronic .
Definetly going to make a bigger batch some day. 
First the wet and dry mixed seperatly.

I forgot the chocolate chips so I went to the corner store and got two Skor bars. Got to try this with skor bars.


Ths special muffin was baked in a pot pie tin.



Finished product.

My bread only took 1 hour to cook and 1/2 hour for the small one. I have a video addition for this thread comming soon.
