Dear Anno..

You suggested something a while back that totally rocked my PC-less world.. that it is possible to use rye berries (or whole grains) without a PC... through multiple boiling cycles, to allow for endospores to germinate... hmm.. I wonder do you have more details, such as ratios of rye berries vs. water.. and does it require 3 boilings just to be sure, or would 2 suffice?

This could be the breakthrough of the century!

I tried this with a standard rye recipe(100g rye and 105 g water per pint jar).

I cooked it twice for 30 minutes and the 3rd time for 45 minutes just to go sure and it worked.

There has to be a pause of 1 day between each boiling.

Tyndallization(fractional sterilisation) process

1) Steam heating to 90-100 ?Cfor30 min
Vegetative cells are destroyed but endospores survive

2) Incubate at 37 ?C overnight
Most spores germinate

3) Second heat treatment 90-100 ?C, 30 min
Germinated spores are killed

4) Second incubation at 37 ?C overnight
Remaining spores germinate

5) Third heat treatment
Germinated spores are killed
