Yogurt Smell......*sigh*

Hey Y'all,

I had 2 cakes that just stopped growing in the jars, they were close so I opted to case them in a tupperware. Yesterday I noticed a sour-ish but pleasant yogurt-like smell in the casing....I suspect contamination :frown:

What could be causing it? Bacterial more than likely...probably some lactobacillus or something like that... Any hints?

Hey Boxtop,

it smells exactly like plain yogurt: mildly acidic, but fairly pleasant. not sweet exactly. It is very distinct, but NOT like sour milk; very different from that.
I put some H2O2 in the casing and put it in my outside experiment greenhouse because I don't want it infecting my good stuff inside. I peeked at the pieces of cake inside the casing, and it looks OK so I'm gonna let it try to work it out out there in the greenhouse. Maybe there was some sort of "bloom" of a fairly friendly culture. I was trying to be careful but got some casing on me, last night but not sick so probably not a real evil killer kind. My guess is for a yogurt-type culture that kills yeast, Acidophilius or Lacto-Bacillus. That would explain the yogurt-smell....

FOAF just experienced the same thing but cant tell where the smell is coming from? Could it be the casings he did with rye?

This was a first time casing, crumbled BRF cakes with vermiculite for the casing. Could not detect a "hub" in the casing, as you say it just sort of emenated from it ever so slightly--was not very pungent, only if container was open did I notice it.
