fully colonized?

whats the for sure sign that your jars are fully colonized? do you just wait till they are solid white to initiate pinning?

Wait until the jars appear 100% colonized (solid white). Give it a day or two after this to make sure the center is fully colonized as well. This is especially so when using the PF Tek.

will waiting a few days after the outside is white insure they are colonized 100%

It should help. It is not as critical if these jars are used for spawn, but very important if you will be fruiting directly from this substrate. The center of PF style cakes are notorious for colonizing slower than the outer portion, especially when inoculating them against the glass.
