I had nocked up two Rye bags with Pan Cyan LC, things seemed to be going just fine...a little slow but good.

Then I noticed a familiar smell, took me a few to recognize it but it is most defiantly a fermentation smell

While I know what that is for brewing and such I can not think of how I would apply it here.  Fermentation


The bag seemed to have perfect moister content, meaning no standing water, and the grained were FULLY hydrated, less then 5% had burst.


The bags are in the garage cause they smell but did I do something and how can this be avoided.



So any thoughts :bongload:

Must have been some bacteria that survived the PC. That happens with bags sometimes. You have to allow extra time for the heat to penetrate all the way to the center of the bag.

R/R has it down. :thumbup:

I increase PC times to around 3 hours, when I stuff the AA 941 full of bags.

Fermentation is most often brought on by live bacteria living through the sterilizatiion process, or getting introduced in the innoc process, or from an LC.

Bacteria can also wick in IF the bag filter gets moist.

With a little excess moisture & to high of incubation temps, the bastards often thrive. :mad2:
