I prepped several wbs jars 3 days ago but have not gotten around to pc'ing. I was about to load some of them into a PC today but noticed a nasty smell. Seems like the bacteria started colozing already. I will cooking at 15 psi for an hour. Will these be OK after I PC? This should kill anything inside...right?

I PC jars, as soon as they are loaded. PC will sterilize then. But, I would think they are going to be on the wet side.

They are on the wet side. I can't get wbs wetness correct. I tried soaking and pcing without simmer, and they came out looking like toasted wbs...no colonization. The only thing I can do is try again. It's just frustrating. I just pc'd another 7 this morning. I soaked the wbs for 24 hrs and simmered for 20 minutes. The result:

These look fine to me. I'm going to try a G2g transfer with these.

I've got good results with this: 24hr soak, 1 hour sitting in hot water (with burner off), rinse WELL, drain for 45 minutes.
I don't simmer any more, no point in pushing the moisture content past it's natural capacity and dealing with burst grains since it's only going to be used as spawn anyway.

is it possible that my my heat is too high when I am pc'ing? Could this lead to toasted wbs with absolutely no moisture? I'm starting to think you guys have magical bird seed.

damn wbs seems to always attract problems.

Well, I've read a few of your posts, and what you're doing should be working. I know that some PCs are more effecient than others. Effecient as in, moisture retention. But my PC is a 12 quart mirro, I don't think it qualifys as one of the nicer ones.
Couple points that may or may not be helpful: I've inoculated jars that APPEARED to be too wet, they colonized. I've inoculated jars that APPEARED too dry, they colonized. But you've stated you did inoculate with bad results, so that might not be worth much.
Here's what I would try: next batch, as soon as pressure drops, remove the jars, dump the water, leaving just a tad in the bottom, replace the jars, secure the lid and let them cool down inside the PC. Leave the foil on until they cool down. Also, if you shake before inoculation, wait for the cooldown, or consider not shaking at this point.
But I think I'm still at a loss as to what the actual problem is. What kind of lid prep do you use? Also, I think I remember you saying you've had jars that were too wet as well, what was soak/simmer times on those jars?

I even use the same Bird seed as Agar.... ....And yet I get results that would make you think a cave man did it...

ebass, a couple of my 7 jars turned out looking like they were toasted when they came out of the PC too, a couple looked too wet...they all did colonize and now i see moisture collecting on the insides of the jars, 2 jars are only days away from being spawned. shoot some spores in it and see what happens  *edit* now that i think about it...the ones that i thought were toasted look more like they are just cooked and the natural oils in the seeds were collecting at the hulls. the moisture content seemed to be fine a couple of days after inoculating and they began to look normal. maybe it was just im imagination thou

Observation is required with WBS. From all the problems people are having with hydrating it, I think it's safe to say their is no set 'tek' or recipe you can do in every situation.
Just observe the seeds before starting the hydrate them, then watch them as they hydrate. When they are swollen, but not bursting, they are done. With a 150F steeping(simmering is too hot IME) the seeds will get kind of 'clearish'. Think about Top-Ramen noodles. It starts as opaque, but after it's cooked, many of the noodles get a 'translucent' look. Look for this in your larger seeds(not the millet).

they get toasted when the water boils off or they are pc'd too long.. try adding a bit more water before you pc.
also if you load up jars and don't have time to pc them, toss them in the fridge.. a few days will be added the shelf life at least.
