Fermented Smell

My casings have a fermented smell to them - sort of sour and sharp. I'm not really sure how else to describe it, but it's quite potent. I'm new to this hobby, and wonder if this is ok?
I did 10 brf cakes and fruited them in a poor man's pod. After the first flush, I dunked them for 48 hours. I noticed that the cakes were quite dry and figured that the low moisture content was the reason for the small shrooms I got. Hoping to deal with the dryness and to increase yield/size, I decided to move on to a casing for the second flush.
I broke the cakes up in plastic zip lock bags into about 1 inch pieces and left them in the bags for two days to recover. The bags were sealed and kept at about 80 degrees. Then I prepared four casing pans with the 50/50 tek and am incubating those. It's been three days and I checked on them just now and they smell really strongly. The mycellium is beginning to pop up in a couple of spots on all the pans though. I first noticed the smell when I opened the zip locks after letting them sit for a couple days, but it's stronger now.
Should I be worried?

Mine smelled like mushrooms. Ive heard and read that a fermented smell can be bad news, but who knows?? Got any discoloration?

You should be worried but it's not a done deal. I have had cubensis casings smell like that before (many times). If it doesn't clear up in a few days or if the growth stalls, it's toast. I wish I could tell you why that sometimes happens, but I can't. It just does.

its because of a lack of air exchange. you get that when you seal a casing or restrict air too much when covering it. Air the shit out for a while and let it get some more air from now on. just use one piece of tin foil with holes poked in it, and dont seal it up around the edges, just get it to hold and not be too open.

sometimes you get it when casings are stored in something and dont get the air flow they need because of a lack of space.
