Leaving unattended

Just a quick question.

About half of my jars are fully colonized, and the other half are getting there, with the furtherest along being close to three quarters. This weekend I've got a lil four day vacation that could very well turn out longer  :grin:

I'll take my fully colonized jars out, put them in some paper sacks and store in the fridge. My question is whether it will be safe, or all right, to leave the other jars in the incubator until I return?
Basically, I'm wondering what is the safest amount of time that I can leave them?

If not, I suppose I could place them in the fridge too, and just put them back in when I get home.

It depends on how long you will be gone. Those not quite finished jars will be fine in the incubator for 4 days or so. If you're going to be gone a week or longer I'd put them in the fridge with the others.

How long has it taken for them to get where they are now? If it's been a couple weeks then I wouldnt worry about moving them all to the fridge but if they're colonizing really fast I probably would. If they are slow to colonize you should be safe until you get home even if a couple start to grow in the jars.

Thanks for the info. The slower ones are between days 10 and 14. I'm just going to throw them in the fridge too since, if everything goes right, this vacation will last longer than a week.
