How high you have to get it depends on how you're growing. With cakes it should be higher than casings, and with casings it should should be between 90 and 95%
If you have heated water on the bottom of a closed rubbermaid container it is probably higher than 85%. Just from reading these boards it seems like 85% is the magic number that alot of humidity testers crap out on. Are the walls of the container covered in condensation? If so it is probably fine for cakes and a little too high for casings.

I would guess that it's just the humidity tester not going past 85% and the humidity in the container is probably adequate... condensation covering the sides of the containers is a good sign that there is enough humidity for cakes. I've never used any kind of humidity tester, and that is just a rule of thumb, but I've seen alot of posts from people who use them giving links to certain models which read in the 90+ range and they are usually in response to people saying their humidity isnt going above 85%

Just get rid of the set up you are using now and cover the bottom of the container with a couple inches of wet perlite. It's extremely easy and effective. It will get it up to 100% without question.

Do a salt teat on your hygrometer to check it's accuracy. Then decide if you have a problem or not
