I am doing a mix of BRF and Millet flour right now. the Millet seems to be colonizing faster than the BRF. Strain is PF classic. We will see which one fruits better soon.

Be careful with DRF, i've had nothing but trouble. I've gotten 100% bacterial contamination and I dont have time to let jars sit for 24h to let the endospores germinate. Fuck it, i'm starting to use RYE anyways. Much better, when spawned, IMHO. Pretty easy too. My first attempt is going fine I thought I had contamination for sure when the under preassurized jar sucked in lots of air but it seems fine.

Dark rye flour is better, it's made from the whole grain. Light
rye flour has the bran and germ removed (less prone to
spoilage, but less nutritious as well). Medium rye grain is
missing the bran part but the germ is still there. This
information is based on what I read on a cooking web site
so I won't take personal responsibility for the accuracy.
