Pressure cookinga honey lc

what should i pressure cook a pint size honey lc? 30 min at 15 PSI?

Do Karo instead of honey.. that way if it carmelizes (something you dont want) then its much more obvious. 30 mins carmelized it for me.. i only do like 15 now..

I agree. Honey and Karo syrup are fairly contam free to start with, because of the high sugar content. Bacteria thrive in sugar concentrations up to about 3 or 4%, but do not grow easily in higher concentrations. So, if you boil the water first, add the sugar, and PC right away, you are starting with a pretty clean solution. On top of that, liquids in a PC are sterilized much quicker than a jar full of grains and air, so your LC will sterilize much quicker than rye, for example. I agree with Razman, 15 minutes should do it, as I've heard some people complain that even 20 minutes in a PC can sometimes caramelize the sugars.

15 min is perfect, just dont go over 250F which is at 15 psi and you wont caramelize it. Keep it at 13 psi for 15 min would be all you need if u want to play it safe, like mogur said, liquids are easy to sterilize. Just start the timer once it your PC is at the desired psi.
