Pancakes

Pancakes are a breakfast must every now and then. Here's my recipe.
Pancakes: 1C All purpose flour 1/4-1/2t Salt 2t Baking powder 2T Sugar 1C Buttermilk (you can use regular milk if that's all you have. Just up melted butter to 3T) 1/4C Milk (may or may not need this) 1 Egg 1-2T Melted butter
1. Sift flour, salt, baking powder, and sugar together.
2. Heat a griddle or a pan or whatever over medium heat, and wait for the right temperature. You know it's good when drops of water bead up and roll off. If they sizzle and evaporate, it's too hot.
3. Mix in the buttermilk and egg together. Add that to the dry ingredients along with the melted butter, and combine until moistened. The batter will still be lumpy, so do not overmix! Now, if the mix is too thick, add some regular milk.
Don't mix the wet and dry until you, and your griddle, are ready to go.
4. Lighty butter up your griddle, get a 1/4C measuring cup, scoop out some batter, and dump onto griddle. When bubbles form on top, flip over. Let go another minute or two(until browned), remove, and add whatever you like. Butter, syrup, etc.
There you have it. Easy breezy.
You can do a lot of different things with this basic mix. Add some pumpkin spice to the dry ingredients for added flavor. Add food coloring to the wet for holidays. If you want to add fresh fruit, or nuts, do it right before you flip the pancake. If you like bigger pancakes, use a bigger measuring cup. If you like thinner pancakes, thin the batter with a little more milk.
Hope you enjoy.

Any personal suggestions on how to make these somewhat healthier?
I know you could go with...
Whole ground wheat flour Artificial sweetener Fat Free Milk Egg Whites AppleSauce for the butter.
It might not taste like a cholesterol goldmine, but it helps when you've got a killer munchie attack for the pancakes.
Great recipe

Sorry, healthy isn't my thing. I don't think it's too unhealthy though. Well, as long as you're not eating it 5 times a day
I'll try and work out a nutrional breakdown of this recipe for you later though.

you could replace all the liquid ingredients with a German wheat beer.

Nope. I've only made them the way I wrote that. I'm gonna start playing around with this though. I'll see if I can make a girly version, and a beer version to start.
Now, have YOU ever made them with water and milk?
Chazzersize - I was just busting your chops. I think everyone is way too worried about carbs and fat and all that stuff these days. If you eat in moderation and exercise, you're good to go IMO.

Ive only made them from scratch a few times years ago. I use water with the box mix though.
I was just asking because Ive always got the ingreedients around and sometimes I crave pancakes. No buttermilk though.. Should work out just fine.

I know milk works fine in place of the buttermilk. When I do this, I just up the melted butter a little. I doubt substituting water for some, or all, of the milk would hurt too much.
Also, in a pinch(if you want), you can add a 1T of lemon juice, or cider vinegar, to 1C of milk and let it set for ~10 minutes. Makeshift buttermilk.

you can also seperate the egg yolk from the white and add the yolk like you did but lastly whisk up the egg white too peaks and fold in the mix before pouring,it gets rid of the floury taste you can get making them

Why not just whip the egg?
Here's what I do.
1 cup flour 1/2 cup water 1/2 cup milk 1T baking powder cooked vegetables grated cheese to taste
Beat the egg, add the water and the milk. In seperate bowl combine flour, baking soda, and cheese. Mix in wet ingredients, I usually do it til its smooth, but don't really know what the lumpiness adds...I usually also mix in the vegetables but I think putting them on top of the pancakes once they hit the pan would be the better way to go.
So yea, get the pan hot, Get about 2T of batter per pancake, sprinkle chopped, cooked vegetables in there. Wait til they bubble, flip, let go a couple minutes til brown (stole that last part from you dam)
No salt required.
