What is the best way to cook shiitake mushrooms? I have some dried ones.

I posted this in another thread, but it's how I like to cook them so I'll copy it here..

Quote:

I usually cook mine up in a mix of a little bit of butter and lots of soy sauce (or teriyaki sauce) if I'm making them plain or planning to add them to something else.
Also sometimes I add stir fry meat, rice, onions, etc.. Onions and garlic seem to give them some extra flavor as well.
I just find that they taste best with some kind of salty sauce such as soy sauce. Just my opinion though.

Can you do that with them when they are dry though?

You can use them as a seasoning, or addition to something if they are ground up. Also re hydration.

If they are dry soak them in warm water until the are reconstituted, then you can treat them as if they were fresh. Also if you have a lot of dry material, after you soak them, save the liquid and use it as sort of a shiitaki extract. Its full of great fungus flavor! Enjoy!
