Hey guys I was trying to pasturize my straw and my meat thermometer stopped at 140 for a while, despite more bubbling. so I moved it to the other side of the pot and then it shot up to 200. It was at 200 for 20 minutes max, probably less.

A friend of mine told me it was alright if i put it at 175 and leave it there for the rest of the time.

Is it okay? Or did I fuck it up?

I recently conducted an experiment by pasturising a jar of straw at 150, and sterlizing a jar at 250. I then left them to sit and waited for contams to show up.

The jar that was sterilized showed the first signs of contamination at day 9. The pasturized jar showed signs of contam at day 20. This was with them exposed to dirty air. Your straw will likely be closer to day 9 than day 20... but as long as your spawn rate is high, the straw should colonize in about a week.

In other words, you've upped your risk, but it'll probably/most likely be fine. I wouldn't start over, just keep temps down next time. I would use a high spawn rate.

cool, thanks man. I cna onlly assume it didnt go much further than 200 because 200 is as high as my thermometer will go. my friend, who deal withte spawning part, has alot of jars os i'll pass the word on.

damn i wish i had one of those roasters that stay at a steady temp. I find it such a chore to pasturize straw

Personally, with the cheap cost of straw, I'd start over. I've found that even pasteurizing at 180, the straw would contaminate just as the first pins were forming. Keep it to 150 max and have fewer problems later.
