This sounds similar to the pyrex bowls I get a kick out of using. I inoculate through the wrapping every 2 inches with a liquid culture. This leaves behind holes for gas exchange and the barrier is the filter. The mushrooms are allowed to grow invitro, so the ones heading upwards simply get pushed around the top of the bowl from the wrapping. This is a compost substrate.

Here's another allowed to fruit in the open air. It was misted heavily a few times a day to prevent cracking and aborting.
And yes, the coir and vermiculite should work out fine. I like to use coir for substrate material.

Well i do nt do it similiar to your way..what i did was use the same type of bowl except i filled it with poo about a half inch from the top and let it colonize with my spawn..then i added the casing layer to the brim of the bowl then added tinfoil/saanwrap..

That's basically the same thing I do. Rather, I add my casing layer in dry form to perform like a filter. It depends on the type of enviroment i'm aiming for fruiting. If invitro, I simply allow the filter/casing layer to remain dry and the fruits do their thing along the roof of the plastic. If opened air fruiting is my deal, the tape holding the plastic is snipped below the rim of the bowl so I can remove the plastic. Then, I drench the dry casing/filter material with water a few times a day for open air fruitng. The fruit mainly come from the interior of the bowl invitro and grow out to the top where light and fresh air is available. Keep the water comming onto the casing layer. You'll be able to see if your watering too much from the excess water building up in the bottom of the bowl.
