beer additive
    #544775 - 02/08/02 11:23 AM (21 years, 7 months ago)

We buy beer bulk (i.e. kegs) and as a result always have some dregs (ala Cannery Row). I have combined varioius mixtures of spring water, manure water, straw water to my rye grain when creating my grain jars and have found that the mycelium tolerent of a gamut of mixtures. I am considering adding my beer slugs to the grain in varied water/beer percentages. I will avoid wasting precious (though flat) beer and I hope give the mycelium a nutrient rich medium. The alcohol I assume will boil off during sterization leaving a carbo-B vitamin rich broth. Any thoughts?

dont sound like it could hurt anything to me. After all beer is made from fermented grains.

This is from R. Rush Wayne, Ph.D.

Beer-Based Medium (BBM)

Here?s a medium for agar plates that saves most of the weighing and measuring. It is also perfect for those of you who can?t find a source of malt extract. And even if you can, malt powder can turn hard as rock in storage. This medium gets around that problem. It comes to you courtesy of Dr. Nenad Vidovic and Sansin Corporation in Ontario, Canada (see Vidovic, N., Specialty Mushrooms?Small Scale Production, Mycelium, 25, 1999, pages 4 and 8). Dr. Vidovic showed that several mushroom species can grow on BBM just as well as they do on commercial malt extract agar medium. I have modified his recipe to include peroxide.
Ingredients:
1 part fresh beer
3 parts water
2% agar by weight (2 gms agar powder per 100 mls of medium, or 1 tsp per ? cup)
1) Mix beer and water.
2) Add agar.
3) Sterilize in a pressure cooker at full pressure (15 lbs psi) after steaming 10 minutes to dissolve the agar.
4) Cool until the container can be handled. Then add peroxide (6 mls/liter of 3%), mix well, and dispense medium into sterile petri plates.
Dr. Vidovic also reports that sterile BBM without agar makes an excellent storage medium. He calls this LBBM, for ?liquid beer-based medium.? Cultures of both oyster mushrooms (Pleurotus ostreatus) and morels (Morchella species) were easily recoverable after two years in LBBM (with no peroxide added). It also works well for spore germination.

or you could go to your local home brew store and get about 3.3lbs of malt extract for about $10.00

If I take the time to grow my own mushrooms do you think I'm gonna drink crap beer. Nah, I'm talking micro and local brews. Funny, I find a close affinity between homegrowers and home brewers.

Looks like an excellent agar recipe. The malt and potato based agar gets sorta boring for my mycelium. Like the long term storage possibilities too. Any thoughts on the addition of beer to my grain jars? I worked out a successful spring water to manure water proportion (175ml/25ml for quart jars) and think a higher beer to water ratio would probably work fine. I guess the point of all this is by giving the mushrooms suffcient variety at all stages of their life cycle one would get a better product.

The alcohol will boil away if you give it a way to escape. I'd say maybe simmer the beer for a bit in a pot first, then add it to your jars or bags.

The air transfer via the hole in the lid and filter disc I think should take care of that. I will probably try next week. I can't beleive there isn't some accumulated knowledge on this.
