Need Dinner Opinions

I've got some chicken breasts, and I plan on stuffing them with spinach(cooked in EVOO and garlic) and Cabrales blue cheese. Now, my question to you is, should I crust them with pistachios?

I never used pistachios in this manner, so I figured I'd see what everyone else thinks. Pecans work out well, so I suppose pistachios should too.

Seems as though most think it to be a good idea.

Personally, I can't stand pistachios, so I voted no. I would slap some flower, egg, and italian breadcrumbs on there. But I'm a simpleton. :wink:

My grandma used to make chicken with a dandelion wine sauce. She'd serve it with a dandelion salad.

I feel those nuts would take away from the taste you are getting out of your stuffing.

some 1/4" slices of some nice brie, placed over the breast when the chicken is done and melted to a slight golden brown with a torch would be my pick

I'm a trogldyte of cheeses though. I like cheddar and pepper jack and swiss and provalone and muenster.. but the rest I can not stand. I've been to a wine & cheese tasting and yuck to both. (Don't like wine either)
