2006.03.19 - Chicken Pot Pie

Alright folks, let's kick this off. Sorry about being late on posting, but I was at a car show all day. Now, without further ado, the first FAGS recipe...
Chicken Potpie: 1 Chicken (3-4 pounds) 3 Carrots 3 Ribs of celery 2 Medium yellow onions 2 Bay leaves 1/2t Whole black peppercorns
Pie Crust: 2 1/4C Flour 1t Salt 10T Cold unsalted butter cut into thin slices (slice it up beforehand and set in refrigerator until ready for use) 1/2C Ice water
1C Peas 4T Butter (preferably unsalted, but if you only have salted, adjust seasoning to taste) 2t Garlic, chopped (about 2 cloves) 1/2 Pound(8oz) Shiitake mushrooms, stemmed, wiped clean, and finely sliced 2t Seasoning, recipe follows 1t Salt, or to taste 1/4t Freshly ground black pepper, or to taste 1/2C Dry white wine 1/3C Heavy cream 1/4C Flour 2T Fresh parsley, chopped 1 Large egg beaten with 1T water, to glaze pie crust
Seasoning, by volume: 2 1/2 paprika 2 salt 2 garlic powder 1 black pepper 1 onion powder 1 cayenne pepper 1 1/4 dried oregano 1 1/4 dried thyme 1/2 crushed red pepper
1. Coarsely chop 1 carrot and 1 celery rib. Peel and quarter 1 yellow onion. Place the chicken, diced vegetables, onion, 1 bay leaf, peppercorns, and enough water to cover by 1 inch, in a large stock pot, and bring to a boil over high heat.
2. Reduce heat to medium-low, and cook the chicken until tender, 35-45 minutes. Skim off any foam that forms on the surface.
3. Remove the chicken from the pot and let cool. Strain the stock into a clean stockpot and reduce over high heat to 3 cups, then cool. Skin and bone the chicken(save it or throw it out). Cut the meat into 1-inch pieces and set aside.
4. Make the pie crust by combining the flour and salt in a bowl. Cut the butter in using a pastry blender, or your hands, until pea sized balls form(look this process up if you've never done it, as it's important). Then use a fork to stir in the water 1 tablespoon at a time, and work with your hands just until a smooth ball forms, being careful not to overwork the dough. Press ball into disc, wrap in plastic, and refrigerate for ~30 minutes.
5. Chop the remaining 2 carrots and 2 ribs of celery, and peel and chop the remaining onion.
6. In a medium pot blanch the carrots and peas in boiling water until just tender, about 2 minutes. Drain and reserve.
7. Preheat the oven to 400 degrees F.
8. Melt the butter over medium-high heat in a large heavy pot. Saute the onions and celery until soft, about 3 minutes. Add the garlic and mushrooms to the pan and continue cooking until the mushrooms are soft and give off their liquid, about 5 minutes. Add seasoning. Sprinkle the flour in to make a roux, cooking for 2 to 3 minutes to slightly thicken(make sure there's no flour lumps). Add the wine, heavy cream, and cold stock, stirring well until combined. Add the chicken, carrots, peas, and parsley, and season to taste with salt and pepper.
9. Transfer the mixture to a casserole dish(or whatever you'll be using).
10. Remove the dough from the refrigerator and place on a floured surface. Roll out the dough big enough to cover your cooking vessel. Gently place the dough on top of the mixture, and press the edges around the vessel to seal. Brush the top of the crust with the egg wash, and cut a few slits over the crust. Bake until golden brown, about 10 to 15 minutes.

I can already tell that this will be really fun. Great choice on recipe too, not too hard and I bet it will be delicious. GL everyone, as I will be in Hawaii for the next 10 days

I made my pot pies last night and they were great.
I made some changes like using chicken breast and good chicken stock instead of a whole chicken. This cut total cooking time by an hour.
I also added potatoes and peas and green beans and mushrooms and???? whatever I had in my fridge because I like that but pretty much followed the recipe exact 
I only had one stick of butter so I substituted shortening for the other half. I didnt quite make the dough right because instead of adding the water slowly, I added it all at once. Shame on me, I knew better. Doing this makes the dough more elastic and instead of turning out flakey it turns out more like pasta dough.
It worked though. Taste great. I did have to add a bit more salt than suggested and I couldnt help but add some smoked pepper BBQ rub in too.

After working on until 4 in the morning, I woke up today to cook 
Onion, carrot, and celery cookin in butter:

Mushrooms and seasoning added:

Stock, cream, wine, parsley, and vegetables added:

Let it simmer a bit, then put it in a 9x13:

Out of oven:

No kitty, that's my potpie!

I forgot to take pictures of the crust production and stock making though 
All is well on my end. Now I will start working on Sucky's steak. Hope everyone that made it enjoyed it.
