Soaking rye grain Q's
    #5428880 - 03/22/06 07:38 AM (17 years, 10 months ago)

i am currently soaking some rye and unfortunately am soaking to much for my needs as i am not going to be able to PC all of it when it has finished soaking. my question is can i drain and rinse the grain that i am not going to use store it for simmering at a later time in a paper bag or something? i don't want to let is soak for a few days because i don't want it to sprout. i don't know that anyone has done this before but any advice or warnings would be appreciated, thanks...

Sounds like a bad idea, unless your going to pc more tomorrow. But i'm not a rye expert.

If you let it sit, it is going to grow mold. Soaking germinates the spores. Soak it all, simmer it all, and PC it all, then store the excess away. Keep it sealed though. You dont have to pc it all at the same time. While you are pc'ing one batch, start rinsing and draining the other.

After you have them soaked, rinced, and drained, just freeze them. =]

The answer is no, wet rye will germinate and sprout after 24 hours.  How are you soaking?  I spent the first 2 months just learning how to properly soak and pasteurize rye.

At first, i would just pour 1 cup of rye straight from the bag into a 1 quart jar and add water.  After several jars getting contamed, i figured out this was a bad idea.  Now, i will pour 1 cup of rye into a pasta strainer and rinse thouroughly for 5 minutes.  Then, i put the rinsed rye into a 1 quart jar and add enough distilled water to submerge the grain.  Then, i cap it off and let it sit for the night(12 hours is perfect).  As you know, this allows the bacteria to germinate.  After 12 hours, i will open the jars and pour out the funky water.  I do this by just holding the bottom of the pasta strainer against the mouth of the jar and turning upside down over a sink.  The water will drain without having to remove the rye from the jar.  Make sure you drain thouroughly.  After it is drained, re-capp it and toss into the PC(1 hour at 15 PSI)  The rye has already soaked up enough water, so make sure you drain it as good as possible.  If there is excess water, then the rye at the bottom will turn into JiffyPop(cooked!) and burst.  Pretty much all my contam issues came from having exploded rye at the bottom of the jar.  If you ever see Rye JiffyPop stuck to the bottom of your jar.... toss it and try again(rye is cheap, why even attempt it).

If you soaked too much rye and dont want to use it all you would have to dry it out again. I sure that if you put them on a plate and dried them as much as possible with aa paper towel and them fan dried them that might do the trick. One thing that I found is REALLY important when useing rye is that you need a good temp monitor if the temp if much above 85F for a week or so the rye will fermint I don't know if that is bad for the myc as the myc seems to grow just fine on ferminted rye but I dont think that its a good thing.

PC what you can, and throw the rest out. Next time, soak the right amount. Don't take chances with contamination trying to save 50 cents worth of rye.

R/R is telling you RIGHT.

Just toss the excess out for the birds to eat.
