Pressure cooking at a lower pressure
    #5427681 - 03/21/06 09:47 PM (17 years, 10 months ago)

Yes, everything I've read has said 15 psi, however, I could save a lot of money by using a pressure cooker that is set at 10 psi. Can I cook for longer, or at a higher temperature?

The reason you want 15 psi is the temp will reach 250 deg F which will sterilize better. You can pc longer, but if you are doing grains, you will need that extra 5 psi.

I have a 10 psi pressure cooker, I let the jars sterilize for an extra 5 mins. and so far I have had no problems.

Yes. It will lower the boiling point of water. Higher pressures are needed.

Sorry I didn't mention this at the beginning; I will be using the PF-tek. This will only be a temporary cooker until more funds are avaliable...

The PF Tek is a little more forgiving. It will be OK to cook a little longer.
