So, I have an old alluminum pressure cooker... It's old. so it doesn't have a guage on it.
Instead it has one of those things that rocks back and forth.
I've never used it. Maybe you could tell me how?

You want it to have a slow, steady rock, for however long your pc'ing.

I know with mine the weight that rocks depicts the pressure.
No weight = 5 psi 1 weight = 10 psi 2 weight = 15 psi

Might be a good idea to see if you can figure out what make and model that PC is. Then see if you could dig up an operating manual on the net.
If it's really old and you haven't used it before I wouldn't suggest going for 15psi the first run.

Press quite hard on the release valve, if it stAYS in then your good to go. Let the thing rock slowly and etc DONT LET IT ROCK FAST OR YOU MAY LOSE AN EYE literaly. My first pc was bunk and almost killed me like 5 times untill it blew the valve without a towel in the pc to clog it and it shrivled into like a smaller PC that was bent.

how much water should you put in the bottom of the pressure cooker to sterilize the jars?

In my 30 quart it calls for at least 2 inches of water.
I think capacity matters here. I would go with at least 1.5" but not more than 3" as a guess.

For the water just make sure it isn't enough to float the jars but enough so it won't run dry
|
