I remember reading an old post about someone having access to a large quantities barley malt for free and I believe he was probably using spent malt (why else would he have access to some for free?). He reported bad results and this is to be expected with spent malt, this would be akin to using spent substrate for a new batch of shrooms. It does makes sense that malted grain should provide easily utilized nutrients for mushrooms, more easily utilized than whole, unmalted grain - that's why it's used for other fungi (yeast). It's also why malt is used in agar mixtures. The process of malting consists of soaking grain and then allowing it to sprout in a carefully controlled environment. The grain will only be allowed to grow to the point where enzymes are released and complex carbohydrates are broken down into simpler sugars and other enzymes start to break down proteins, the growth is then stopped by drying the grain before it starts to use the converted carbohydrates and proteins for further developement. I'm currently experimenting with a combination of malted rye grain, finch seed and perennial rye grass all ground to flour and used in place of brown rice flour in the PF tech method. I inoculated my substrate at about midnight on sunday with mycellium water from cambodians. I checked them Tuesday night at about 8:00 pm and they are already about 25% colonized. So far, I am very happy with the results.
