IRISH CHEDDAR AND STOUT FONDUE
A meatless yet rich dish that would make a perfect appetizer for St. Patrick's Day dinner.
2 cups 1- to 1 1/2-inch-diameter red-skinned potatoes, halved 2 cups cauliflower florets 2 cups very small brussels sprouts 2 apples, cored, cut into wedges
1 pound Irish cheddar cheese, grated - or sharp white cheddar 2 1/2 tablespoons all purpose flour 3/4 cup (or more) Guinnes 6 tablespoons frozen apple juice concentrate, thawed 1 tablespoon Dijon mustard
Steam all vegetables until tender, about 15 minutes. Arrange vegetables and raw apples around edge of large platter.
Toss cheese with flour in large bowl. Bring 3/4 cup stout, juice concentrate, and mustard to simmer. Gradually add cheese mixture, stirring constantly, until cheese is melted and smooth, thinning with more stout, if desired. Season to taste with salt and pepper.

This was awesome.
Very easy fondue to prepare and was probably the best cheese fondue I have ever tasted.
I found Irish Cheddar at a local grocery for $10 a lb.
Make sure you have some good bread to dip in it too.
Or try 3-4 different kinds of apples.

sounds damn good. My roomates and I made a huge Irish feast for st patties. Cornbeef with the fixins, potato pancakes, soda bread, homemade horseradish sauce, and homemade irish cream..... all amazing. wash down with some car bombs made with guiness, the irish cream, and Jameson..

i dont really have an exact recipe.. my mom used to make them for breakfast every once in a while, now I make them every time I make mashed potatoes.
I usually make them out of left over mashed potatoes (real ones not that powdered shit although it might work) and just throw in what looks like the right amount of other ingredients. So for starting with a couple cups of mashed potatoes I add around half a cup of chopped onion, 1-2 eggs (helps hold em together), and maybe half a cup of flour, and SnP to taste. Thats the batter. It shouldnt be runny like pancake batter but more like a soft dough so that if you dropped a blob in a pan you would have to press it down to make it flat.
Now to cook em is the fun part! I put 1part olive oil to 1 part butter in a frying pan so that it covers the entire pan and has a couple mm depth, then I drop in blobs of batter cooking until the underside is golden brown then flip em over and coook till the other side is golden brown... take em off and butter and salt em for eating. Anyhow these are one of my favorite things to eat... and I really just messed with the recipe until I got it to work. sorry if its long and confusing
