What kink of problems would I have if my poo falls apart while putting them in the fruiting chamber?
I took thees out of the dishes and put them in a double tub w/ a bottom layer of verm, when I did this a few just crumbled..I did this last night, should I add a layer of verm on top? Or would it be best to go out and get some coco coir? What should I do?

Add a casing layer yes, then give the mycelium a couple days to recoup and to pop up on your casing then initiate pinning and fruiting, good luck!
-By the way thats just my opinion hehe.

Should I keep it at fruiting conditions when this is done? And which is the best for casing jiffy mix or coco coir?

According to the people who know far more than I, a Vermiculite/Peat casing is better, therefor between those two I would say Jiffy Mix.
As for casing, there are dozens of casing Teks, find one that is comfortable to you and follow it ^_^

this is the basic steps you take for casing
spawn (mix the substrate (poo) with the spawn material(bird seed) incubate (let the myc run the substrate till its fully colonize) case (put your casing layer on top of the fully colonized substrate) fruit (put it in fruiting chamber with fruiting conditions
youre already done with the incubation stage if your cake is fully colonized, so you need to go ahead and case, then put in your fc. the myc will start to pop through the casing layer at some points and eventually form primordia. just fan it a lot!
i had like 5 different cakes that werent doing well so i just crumbled em all up and cased em, and now theyre doing awesome!

Nope, incubatation.
You goto fruiting when your substrate is fully colonized and the myc is starting to peek up through the casing layer. You cover the peeking parts(patch), and then move to the FC and inniate pinning.

from what i understood, he had a fully colonized cake that fell apart. if thats the case, then the substrate is fully colonized, since the substrate is the crumbled cake.

Fully crumble the cake the rest of the way so that you can make an EVEN layer of substrate. Add an even casing layer 25% of the substrate depth. Incubate until you see the myc peeking through the casing. Cover(patch) the peeking myc with a LITTLE casing. Fruit.
