sweaty cakes

hello, im wondering why my cakes are starting to get like sweaty in the jars? Im incubating at 70 degrees temp to make sure everything is fine. the whole thing looks fine until mycelium starts growing, then little drops of water start to form between the substrate and the glass... and the little water drops eventually start to go to the bottom .. that sucks. is there anything i can do?

You could flip the 1/2 pint jars on their lids (upside-down) with absolutely no consequence if they're at least 50% colonized, and little to none if less-colonized. This may help your problem resolve itself, though 'sweaty jars' aren't anything to worry about at all. People often talk about "mycelium piss" which is a yellowish discharge. If the sweat looks a bit more 'jellied' or looks more like little drops of magnifying glass than water ~ I get that and it's normal. Flipping the jar upside down will help some of the CO2 escape (which sinks) also, definately ++.
