stems truning brown

is it normal for the stems to turn a dark brownish color beneath the cap (they are still immature)...

yes. atmospheric conditions play a major role in the way shrooms look.

no it could be anything, if they are fruiting i wouldnt think the humidity is off, somtimes I get that, somtimes I get pink stems, somtimes the caps are different colors.
It could be genetics also, its no big deal grow those babies and enjoy!!!
