Dryed Mushies Look Different?

The first time my AFOAF has let her mushies mature to the point past were the veil breaks......when she dried them, the caps are not as brown, compared to mushies dried before the veil opened up.

I am assuming the powdery black spots are from the spores.....

Anyone else experience this?

caps are more caramel when they're closed because the pigments are concentrated in the certain area.  When the caps open the pigments spread out creating a lighter tan to white color.
