Rolling cakes in vermiculite

I started fruiting a couple of my cakes recently but unfortunately I'm having problems with the humidity. Right now the humidity is only at 28% in my chamber. I noticed the only place that has pins popping up is the remnants of the dry verm layer on the bottom of the cakes.

I'm guessing the other parts of the cake arent fruiting due to lack of humidity. Also I can see some purple spots building up on the cakes. A while ago I read a grow log and noticed the guy got exceptional yields after dunking the cakes then rolling them in dry vermiculite.
I already dunked the cakes but I was wondering if I could roll the cakes in damp vermiculite to give them enough humidity to fruit. Does that increase the risk of contamination? Will that solve my humidity problem?
For some reason only 1 side of the box has water building up on it.
 The other 3 sides are dry.

 Yesterday when I put my hand in the chamber I felt heat rising from the perlite or the cakes but it seems to have cooled down. Is that a bad sign?
This pin alone has made the whole process worthwhile in my opinion 

 After 2 years of trying I've finally managed to grow a mushroom. 
Anyway back to the question. Should I roll the cakes in vermiculite, will that solve the humidity problem and are there any precautions I should take before rolling the cakes in verm?

i cant belive your humidity is only 28% with all that perlite,either its not wet enough or the lid on your FC is not tight enough, or your Hyrgometer is rubbish i rekon ..good luck

Hi! You definately need to get that humidity up! As FractalXplora has already mentioned, it may be a problem with the hygrometer itself. Have you calibrated it? There are some "how-tos" on this site. If it won't calibrate properly, then it is indeed "rubbish". As for Dunkin-Roll, I personally had better results with Double-Ended Casing: http://www.shroomery.org/index.php/par/23593/pag/9
