Well, I was thinking of dunking the vermiculite and straw in coffee, then mixing with cow poo inside a 66-qt double tub. I know these are easily contaminated if not sterile, so is this probably a bad idea? (I grow in a closet. The double tubs are placed in a large box with screens for air flow. The closet is pretty sterile)

IME, coffee is better suited for soaking your grains in, not for bulk subs.
