spawning/ fruiting question

I am a newbie here... hope it is not to obvious 
I have a couple of questions, I think Ive got the answers for them but I just want to make sure..... I have a half gallon of spawned mexican rye grain and 20 pounds of tenn studd 50/50 mix. I am ready to mix the two!
1. Once I mix the spawned mexican rye grain with the substrate, what temperature is optimal at the surface? I have read that it should be between 78-82F, but my substrate is about 5 inches deep. I am assuming that the thermal heat will be produced in the inner parts of the substrate. With this in consideration, what temp should the surface be? I do not want to kill any mycelium. Maybe I should stick my thermometer in the substrate.. not on the surface?
2. After 12 days of spawning and 5 days of casing... I will be ready to fruit. Ive read optimal temps is about 78F. Taking into consideration that my substrate is 5 inches deep... what should the surface temp be?

78-82F. will be fine for incubating. 78F is slightly too high for any substrate and since you are using poo at 5" depth you are better off fruiting at 70-74F IME.
