Kind of confused, do you have casings or cakes?

Near saturation really only applies to casings. With a cake, just mist indirectly. Meaning like spray a very fine mist on the walls and in the air. You don't really want standing water on the cake itself.

I dunno I misted the hell out of every cake I had and they pinned great. Once the pins come up tho you have to lay off the direct misting as they can damage the pins. However a little mist never hurts.

Casings should be misted till you see water standing then soak in really fast. A couple of good mists should be sufficient. Hard to explain near saturation but whatever feels right usually is. Just don't overdo it.

It's not really a touch thing. It's an observation. When you see tiny glistening water droplets, it's near saturated.
