2-week pin waiting time

This is out of curiousity....
I have read all over that it could take up to 2 weeks for pins on a casing to show.
-why is that?
-what is the average time it takes under optimal conditions?
I am wondering because I figure that if mycelium covers a surface shouldnt it develop pins within a few days like it would on a cake?

Think of it this way... When the mycelium fully colonizesthe substrate, such as the cake, its got nothing left to do but fruit, so when given the conditions it does so quickly. On the other hand you arent fully colonizing a casing so it may still grow before it feels the need to pin. Usually my casings only take a week though and it also can depend on the strain.

Anything over a week is problematic in my experience. Once you get things down, it should be 3-5 days until first sings of primordia on your casing. Making the switch from incubation to fruiting stage too early or too late can cause you delays in pinning.
I'd suggest a 1/4" inch casing layer evenly applied, then incubated for 48 hours even. Use loose tin foil to cover the casing. Remove it at the two day mark and start your fruiting stuff; i.e. light, misting, fresh air exchange.
Making the transition at the right point is critical, you want to see mycelium on the surface when it's time to fruit, but not too much.
Deep casing layers usually cause more problems than they're worth.

I used almost an inch casing on a grow I did a while back. When I harvested, it was common for the entire inch under the shroom to come up with it. This was B+. I was very careful and used the twist and pull method, some of those shrooms were just well anchored. So there's a strike against a deep casing, I was under the impression a thick casing would prevent exposure of the substrate.

Yeah, there's that and also with a deep casing layer you do nothing but wait for colonization = more time for the mean green to set it.

Yep. You are also using valuable nutrients fruiting through such a deep casing layer. Extra time = Extra energy expended on needless growth. Personally, I never go deeper than 3/8", and don't patch either. I've had some killer pinsets, and have never had a casing stall or contam before the 3rd flush.

I've had it take 3 weeks under optimal conditions. I gave them no light at all tho so I think that could have been it. The strain was Costa Rica.
