There's probably a billion practical uses for it, but here are two that would be pretty cool:
1) Control Panel - I.E. for a house where you could control the lights, music, temp, etc in a mixer style.
2) New Control System for an Upcoming Spacecraft or Advanced Military Craft - Just think...instead of 1 or 2 control sticks (2 hands max), you can have 10 points to maneuver with (10 fingers). That could call for some sweet precision steering.

Never mind the graphics, just think about the ways you could manipulate real time audio touch screen style like that

I'd expect it to really complicate user interfaces. There will be no more "standard" input like keyboard/mouse.... it will be up to the developer to create the UI.
It's very cool but nobody will be able to just sit down and just "know" how to use any program based on prior experience like they used to.

your right... it's gonna be a mess... but no diffrent from when games started to get complicated (befor the mouse...) each game was diffrent but eventually you got used to it!
also you should consider the fact that these screens are much larger then the usual displays right now... so infact you can have the main display centered and the tools/interface visually dipicted in the border... so each program can have a diffrent set of tools but these will be visually displayd in the border and not that diffrent from photoshop... of course you have to have a keyboard if it's on screen or an actual keyboard makes no diffrance (maybe then finelly we'll see the demise of the qwerty keyboard? you'll be able to mix the keys however you want! so maybe people would take up the dvorak layout?)
