You can let them get as big as they want even til they turn purple from dropping spores. I harvest once the caps flatten but before they turn purple. The first flush is completed once you pick all the mushrooms, leave the little mushrooms alone so they can finish developing. Just harvest the big ones when they're ready and let the other guys keep going.

If your expecting/wanting more flushes, pick the guys as soon as the veil breaks. DO NOT WAIT until they drop spores! This will decrease your number of new fruit bodies, smothering the substrate and inhibiting any future crops. If that is not a concern, then let 'em grow.

No no, that's not true. Spores are so light and microscopic that they go completely airborn and stick to anything that's most. They don't just fall straight down. So heed these guys' words.

Spores can reach great distances. They can fly for miles. If your cakes are in a chamber, then beware...it's like a bomb dropping from the gills. But, I guess it's really nothing major when you can always start again. Happy Plucking! What type of strain are you working with?

I've never had any problems with spores dropping on my cakes or casings. And sometimes I've had a shitload drop and there was no problem at all.

Agreed. I don't think the spores hurt anything but your taste buds. However, for that reason alone, I like to pick as the veil begins to tear, or shortly afterward. The quality of your harvested fruits will definitely be higher if they're clean and not all black and nasty. RR
