You can extract to everclear...but be very careful. A few years ago, I reduced a quarter pound of dry PE down to less than a shotglass of everclear. Then, I put a teaspoon in a cup of coffee. LOL...never made that mistake again.

Some where I saw a recipe for a shroom mead ( honey wine ) I always thought that would be interesting but I doubt that spores would germinate in a high gravity solution that mead requires. Plus spores competing with yeast in an alcoholic environment seems unlikely.

A few years late, but I'm such a person who has an understanding about this. If you use the Everclear extraction method, add that to the brew during secondary fermentation. Beer would store best because its carbonated and kept cool, so no o2 to break down the fun parts.
Mead would be great for the now, in that honey can also be used as a solvent, but mead takes flavors like chicken, so be prepared for the tastes. Also mead has a rather. Happy drunk feeling and a much higher alcohol content which will bind better to more alcohol.
But mead isn't usually carbonated, so I'd be ready to use within a day or two.
Beer is chuggable and full of complex flavors and has a higher acid content so uptake should be quicker and the flavor better hidden.
That's my two cents.

95% ethanol is not as good as 99% methanol for many extractions. Methanol is the #1 choice for many processes. It was used for every single psilocybin extraction method in the following document: Obtaining psilocybin and psilocin from fungal material. R Heim, A Hofmann , A Brack, H Kobel, R Cailleux. Methanol is commonly used, but for the sake of making crystals. Not a magical additive to beer. Different type of alcohols react with each other and could potentially make the beer (naturally containing ethenol) poisionous giving you something to explain as to why everyone got sick. Using ethanol, it will bind and dissolve better in your alcoholic beverage. Also, as I said, you would want to do the during secondary fermentation. (Maybe after racking for the second time) methanol or isopropyl can kill off your yeast as well, making that theoritical poision beer flat, and unageable, also ruining that shelf life mentioned above. Ethanol extraction would be ideal. Your yeast won't be ruined and you can get the dose down to 3 grams worth of dried material per bottle. Ideal serving if you ask me.

Still. Point stays that if one were to make beer, use concentrated ethanol.
I don't normally jump like that on forums. But Iv been bored out of my mind as of late.
